Zucchini Noodles with Avocado Pesto

Ingredients:

  • 4 medium zucchinis (spiralized into noodles)
  • 2 ripe avocados
  • 1 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1/4 cup pine nuts
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste
  • 1/4 cup cherry tomatoes (halved)

Instructions:

  • In a food processor, combine avocados, basil, garlic, nutritional yeast, pine nuts, lemon juice, salt, and pepper. Blend until smooth to create the avocado pesto.
  • In a large bowl, toss the spiralized zucchini noodles with the avocado pesto until well coated.
